Hotdogs and potatoes in a salty chicken broth with spices. I won't claim that it's a healthy meal, but it is cheap and tasty, especially on a cold night. It usually makes enough for leftovers, which often taste better than it did fresh off the stove.
6 cups diced potatoes.
1 lb. wieners, cut to bite size pieces, between ¼ to ½ an inch thick
1 tbsp parsley.
1 tsp whole oregano
¼ tsp sage
1 clove garlic, minced
1 cup chicken broth
salt & pepper
4 cups water
In large fry pan or pot add potatoes to 4 cups of water. Heat until potatoes start to soften. Add remaining ingredients. Cover and boil easy until broth thickens, about 45 minutes. Serves 5-6.
NOTES:
Use a high-starch potato such as a Russet. For this dish you want it to start to melt into the sauce and thicken it. I' used to only use dried parsley since I seldom had any fresh on hand. Now that I have a garden, I can safely say that fresh is better.
