A quick, tasty, and filling side dish (or main dish for that matter.)
Ingredients:
½ lb (uncooked) fettuccine noodles.
1 tbsp olive oil.
¼ cup sour cream.
½ cup grated Parmesan cheese.
1 tsp salt.
⅛ tsp pepper.
Boil the noodles in boiling salted water and oil until tender but firm, drain. Melt butter with sour cream and simmer for 1 minute to thicken. Remove from heat. Add, cooked noodles to sour cream / butter mixture and toss gently. Add Parmesan cheese and pepper. Toss gently. Keep warm until served.
While this makes a fine main dish as-is, you can also add some chopped chicken breast or peeled shrimp to pump it up a bit.
